- 4 slices bread (use something hearty like a sourdough)
- 2 tablespoons butter
- 2 tablespoons pesto sauce or 2 tablespoons shredded fresh basil leaves
- 8 ounces fresh mozzarella cheese, shredded and divided
- 2 -3 roma tomatoes, seeds removed and sliced
Directions

1Heat a cast-iron skillet over medium heat.

2Butter one side of each slice of bread.

3On two slices, spread the pesto on the unbuttered side.

4Place those two slices, buttered side down, in the hot skillet.

5Spread half the cheese evenly over the two slices.

6Divide the tomatoes evenly in a single layer between the two slices.

7If using fresh basil, sprinkle evenly over the tomatoes.

8Divide remaining cheese evenly between the two slices and top with remaining bread, buttered side up.

9Press lightly with a spatula, cover and good 5 minutes on low until golden brown.

10Carefully turn sandwiches over and cook, uncovered, another 5 minutes until golden brown and cheese is melted.
