- 4 lb. catfish fillets
- 2 c. milk
- Old Bay Seafood seasoning
- 1 large sweet onion
- 3 hot banana peppers
- 3 hot chili peppers
- salt
Directions

1Rinse and dry fillets.

2Soak in milk for 20 minutes.

3Remove from milk and rinse, removing excess moisture.

4Sprinkle with seasoning, rubbing it into meat.

5Start grill and place 1/8-inch thick onion slices on grill.

6Slice banana peppers and place on top of onion slices.
-
7Place fish on top of onion and pepper. Thinly slice chili peppers and sprinkle over fish.

8Cover loosely with aluminum foil.

9Grill until easily flaked.

10Salt to taste. Serves 4 to 6.
