Grilled Citrus Spritzer

Ingredients

  • 4 lemons
  • 4 oranges
  • 6 wooden skewers, soaked in water 1 hour
  • 14 cup liquid honey
  • salt
  • 2 12 cups white cranberry juice
  • 2 12 cups medium dry white wine, chilled
  • 1 cup carbonated water
  • 3 ice cubes
  • 8 sprigs of fresh mint

    Preheat barbecue and lightly oil grill.

    Slice one lemon and one orange into 1/2-inch thick slices.

    Divide the citrus slices between the 6 skewers.

    Cut remaining citrus fruits in half.

    Grill citrus slices untl caramelized and marked on both sides, about 2 minutes per side; remove.

    Grill citrus halves cut side down until well-caramelized and warm 5-8 minutes.

    Squeeze and strain the juice from the grilled halves into a pitcher.

    Stir in honey and a pinch of salt until dissolved.

    Add cranberry cocktail, wine, carbonated water and ice.

    To serve put a citrus swizzle stick and a mint sprig in each glass.
