Grilled Pineapple

  • 1 whole pineapple
  • 1/2 cup stick butter
  • Lime juice
  • Sugar in the raw
  • Freshly ground nutmeg
  • Vanilla bean paste

Directions

    Cut bottom and top off of the pineapple and discard. Leave the rest of the rind/husk on. Cut the pineapple in half lengthwise. Cut each half into 6 - 8 pieces - lengthwise.

    Melt the butter. Add in sugar until a thin paste is formed. Add lime juice, nutmeg, and vanilla to taste.

    Baste the pineapple wedges with the paste.

    Cook on a grill over medium heat until lightly browned on both sides.

    Cut into bite-sized pieces.

    To eat, hold by the rind and eat the flesh.
