- 1/2 c. unsalted butter, melted
- 1/4 c. olive oil
- 1/4 c. minced fresh herbs (parsley, thyme and cilantro)
- 3 Tbsp. fresh lemon juice
- 3 large cloves garlic, crushed
- 1 Tbsp. minced shallot
- salt and freshly ground pepper
- 1 1/2 lb. medium-large shrimp (in shells, unpeeled)
Directions

1Combine first 8 ingredients in large bowl.

2Mix in shrimp. Marinate at room temperature for 1 hour or in refrigerator for 5 hours, stirring occasionally.

3Prepare barbecue to medium-high. Thread shrimp on skewers.

4Grill until just opaque, about 2 minutes per side.

5Arrange skewers on platter.
