Grilled Soft-Shell Crabs

- 1 pound butter
- 8 to 10 lemons, juiced
- 1 tablespoon cajun seasoning
- 1 tablespoon Worcestershire sauce
- 1 tablespoon minced garlic
- Salt
- 6 to 8 soft-shell crabs
- Sliced tomatoes
- Mozzarella cheese
Directions

1Lemon Butter Sauce: Add lemon juice and other seasonings.

2Seasonings may be adjusted for personal taste.

3Allow to simmer for about 20 minutes.

4Clean crabs by removing gills and cutting off the eyes and mouth.

5Place crabs on pan or aluminum foil.

6Place on grill over a low fire.

7Baste the crabs with the Lemon Butter sauce.

8Cook for 5 to 6 minutes on each side.

9Continue to baste during cooking.

10Before serving, top each crab with a slice of tomato and a small amount of mozzarella cheese.

11Allow cheese to melt.

12Remove from grill.

13Serve immediately.
