Saffron Brown Rice

  • 2 1/2 cups water
  • 1/2 cup chopped onion
  • 1 stick cinnamon
  • 1/8 teaspoon saffron threads crushed
  • 1 cup brown rice uncooked

Directions

    Combine first 4 ingredients in a medium saucepan, bring to a boil.

    Stir in rice.

    Cover, reduce heat and simmer 45 minutes or until liquid is absorbed and rice is tender.

    Discard cinnamon stick.

    Fluff with a fork and serve immediately. (Measure 1 cup servings.)

    Single serving = 1 cup starch.
