- 16 ounces lamb, cubed
- 14 cup olive oil
- 14 cup white wine (optional)
- 12 lemon, juice of
- 12 teaspoon oregano
- 12 teaspoon salt
- 14 teaspoon pepper
- 1 lemon
- pita bread, for serving
Directions

1String meat on skewers, leaving about an inch of space at the pointed end.

2Mix together olive oil, wine if using, lemon juice, oregano, salt and pepper.

3Place skewers of meat in marinade and coat well.

4Cover and refrigerate overnight, turning occasionally.

5Heat grill to medium-high heat.

6Place skewers on hot grill and cook just a few minutes on each side, until done.

7Squeeze a bit of additional lemon juice over meat if desired.

8Serve in pita bread that has been brushed with olive oil and grilled for a minute to warm.
