- 1 lb winter squash, unpeeled, cut into 1/4 inch slices
- 2 None medium red onions, cut into thin wedges
- 2 tbsp vegetable oil
- 1 tbsp balsamic vinegar
- 5 cups arugula
- 2 oz pitted black olives
- 3.5 oz feta cheese, crumbled
Directions

1Preheat a grill pan over medium-high heat. Lightly coat squash and onions with oil. Working in batches, grill for 2-3 mins per side, or until brown and tender. Set aside.

2Whisk together oil and vinegar. Season then toss with arugula, squash, onions and olives. Sprinkle with feta cheese and serve.
