Ingredients
- 2 large, red ripe tomatoes, about 1 pound
- Salt to taste if desired
- Freshly ground pepper to taste
- 1/4 cup fine fresh bread crumbs
- 1 tablespoon finely chopped pars-ley
- 1 teaspoon finely minced garlic
- 2 teaspoons olive oil
- 2 tablespoons finely chopped shal-lots
Directions

1Preheat grill to high.

2Cut away and discard the core of each tomato.

3Cut tomatoes crosswise through the center.

4Sprinkle with salt and pepper.

5Combine bread crumbs, parsley, garlic, olive oil and shallots in a small mixing bowl.

6Blend well.

7Top each tomato half with an equal portion of the crumb mixture, pressing down with the fingers to distribute the topping evenly.

8Arrange tomato halves on a baking dish.

9Place them about 8 inches from the source of heat and let cook about 5 minutes.
