Grilled Vegetable Kabobs

- 1/2 c. Italian dressing
- 1 Tbsp. fresh parsley or 1 tsp. dried parsley
- 1 tsp. dried basil
- 2 medium yellow squash, cut into 1-inch pieces
- 8 small boiling onions
- 8 cherry tomatoes
- 8 medium mushrooms
- vegetable cooking spray
- 2 c. hot cooked long grain rice (optional)
Directions

1In small bowl, combine dressing, parsley and basil.

2Cover and chill.

3Alternate vegetables on 8 skewers.

4Coat grill rack with spray and place over medium coals.

5Place kabobs on rack and cook 15 minutes or until tender, turning frequently and basting with dressing mixture.
