- 2 Tbsp. margarine or butter
- 1 medium zucchini, sliced
- 1 medium squash, sliced
- 2 c. sliced fresh mushrooms
- 1/2 green bell pepper, cut into strips
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 c. finely chopped tomato
- 1/4 c. chopped green onion
Directions

1Melt margarine or butter in a large heavy skillet with heat-proof handle on grid over medium coals.

2Add zucchini, squash, mushrooms, bell pepper, cumin, salt and black pepper.

3Cook 4 to 5 minutes or until vegetables are crisp-tender, stirring occasionally.

4Add tomato and green onion.

5Continue to cook and stir for 1 minute.

6Makes 6 servings.
