Ingredients
- 1 large Vidalia or sweet onion, peeled and sliced into 1/2 inch rings
- 1 pints cherry tomatoes
- 1 medium to large zucchini (about 1/2 pound), trimmed and cut into 1/2 inch slices
- 1 medium to large yellow squash (about 1/2 pound), trimmed and cut into 1/2 inch slices
- 2 to 3 tablespoons extra virgin olive oil
- 1/4 to 1/2 teaspoon salt, to taste
- 1/4 to 1/2 teaspoon ground pepper, to taste
- 1/2 cup freshly shredded parmesan cheese
Directions

1Combine all the vegetables in a large bowl.

2Add the olive oil, salt and pepper and toss to coat.

3Place the vegetables in a grilling basket.

4Grill for 20 to 30 minutes (turn after 10 minutes or so) or until the vegetables are cooked to the desired tenderness.

5Place on a serving platter.

6Sprinkle with cheese.

7Serve.
