Ingredients

  • 1 large Vidalia or sweet onion, peeled and sliced into 1/2 inch rings
  • 1 pints cherry tomatoes
  • 1 medium to large zucchini (about 1/2 pound), trimmed and cut into 1/2 inch slices
  • 1 medium to large yellow squash (about 1/2 pound), trimmed and cut into 1/2 inch slices
  • 2 to 3 tablespoons extra virgin olive oil
  • 1/4 to 1/2 teaspoon salt, to taste
  • 1/4 to 1/2 teaspoon ground pepper, to taste
  • 1/2 cup freshly shredded parmesan cheese

Directions

    Combine all the vegetables in a large bowl.

    Add the olive oil, salt and pepper and toss to coat.

    Place the vegetables in a grilling basket.

    Grill for 20 to 30 minutes (turn after 10 minutes or so) or until the vegetables are cooked to the desired tenderness.

    Place on a serving platter.

    Sprinkle with cheese.

    Serve.
