Ingredients

  • 1 pound ground chicken
  • 2 scallions, sliced thin
  • 1 cup seasoned bread crumbs
  • 1 egg, lightly beaten
  • Salt and pepper, for seasoning
  • 4 sesame seed burger buns
  • 4 to 6 slices cheese, your choice (i.e. swiss, american, gouda, cheddar)

Directions

  1. 1
In a large bowl, combine the ground chicken, sliced scallions, bread crumbs and egg.
  2. 2
    Season generously with coarse salt.
  3. 3
Add a few twists from the pepper mill and mix again.
  4. 4
Form the mixture into 4 to 6 patties.
  5. 5
Be sure the patties are flattened, as they will puff slightly once they hit the heat.
  6. 6
Place the patties on a preheated medium-hot grill and cook for 4 to 5 minutes on each side, or just until the juices run clear when lightly pressed on.
  7. 7
Top with cheese and close grill for one minute to melt.
  8. 8
Place the buns on the grill for 30 seconds on each side to warm.
  9. 9
Place one burger on each bun and top as you see fit.
