- 2 Tbsp. shortening
- 2 c. rice
- 1 small onion, chopped
- 1 garlic bud (whole)
- 1 tomato, chopped
- 2 Tbsp. peas
- 2 Tbsp. green beans, chopped
- 1/2 carrot, finely chopped
- 1/4 green pepper, chopped
- 3 c. water
- 1 tsp. salt
Directions

1Heat shortening.

2Add rice and fry until nicely browned, stirring constantly.

3Add onion and tomato.

4Cook slightly.

5Add water and other vegetables.

6Cover and bring quickly to a boil. Lower heat and cook about 45 minutes or until done.

7Do not stir. When serving, remove with a fork.
