Guatemalan Fried Rice

Ingredients

  • 2 Tbsp. shortening
  • 2 c. rice
  • 1 small onion, chopped
  • 1 garlic bud (whole)
  • 1 tomato, chopped
  • 2 Tbsp. peas
  • 2 Tbsp. green beans, chopped
  • 1/2 carrot, finely chopped
  • 1/4 green pepper, chopped
  • 3 c. water
  • 1 tsp. salt

    Heat shortening.

    Add rice and fry until nicely browned, stirring constantly.

    Add onion and tomato.

    Cook slightly.

    Add water and other vegetables.

    Cover and bring quickly to a boil. Lower heat and cook about 45 minutes or until done.

    Do not stir. When serving, remove with a fork.
