- 2 gallons guava juice
- 2 14 cups apple cider vinegar
- 1 12 cups yellow onions, small dice
- 3 tablespoons chopped thyme
- 2 12 cups smoked bacon, small dice
- 3 tablespoons Dijon mustard
- 34 cup liquid egg
- 10 12 cups salad oil
Directions

1Reduce Guava Juice to syrup stage.

2Cook the bacon till crisp, drain away fat (reserve) and let bacon cool.

3In the same pan, Caramelize the onion, then

4add back the cooked bacon

5Add the thyme, remove from heat and Allow to cool,

6then add to the Guava reduction.

7Blend with the mustard and liquid eggs.

8Slowly drizzle the salad oil and reserved bacon fat to emulsify the ingredients.
