  • 1 small onion, minced
  • 1 garlic clove
  • 12 cup chicken stock
  • 2 (15 ounce) cans artichoke hearts, drained
  • 3 tablespoons lemon juice
  • 1 12 teaspoons salt
  • 1 teaspoon oregano

Directions

    Simmer the minced onion with the garlic clove in a little butter for 5 minutes.

    Remove the garlic clove, add all the rest of ingredients.

    Simmer with lid on for 10 minutes.

    Serve with lemon zest sprinkled on top.
