- 2 Tbsp. margarine
- 3 tsp. cinnamon
- water
Directions

1Peel and cut up eggplants.

2Add 1 cup water and bring to a boil.

3Reduce heat and cover and cook 15 minutes.

4Add sugar, margarine and cinnamon.

6Cook slowly 20 minutes more, stirring occasionally, until completely cooked.
