Ingredients
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 1 c. diced celery
- 4 Tbsp. oil
- 4 Tbsp. flour
- 2 cloves garlic, minced
- 4 bouillon cubes (beef or chicken)
- 3 qt. boiling water
- 1 qt. oysters or any seafood
- 1 Tbsp. file
- salt and pepper to taste
Directions

1Brown flour in oil, stirring constantly.

2Add 1/2 chopped seasoning to brown flour and saute for about 1 minute.

3Add this mixture to the 3 quarts boiling water; mix thoroughly.

4Add remaining seasoning and bouillon cubes; boil for about 10 minutes. Add oysters (or other seafood) and simmer for at least 30 minutes.

5Salt and pepper to taste.

6Bring to rapid boil; add file.

7Mix well; remove from heat.

8Let set for 15 minutes.

9Serve over cooked rice.
