Ingredients

  • 1/2 c oil
  • 3/4 c flour
  • 1 onion
  • 3 stalks celery
  • 1 lb medium shrimp, cleaned, deveined and cut in half
  • 3 can chicken broth
  • 2 bay leaves
  • 1 beef bouillon cube
  • Worcestershire sauce to taste
  • 1 bell pepper
  • 1 can tomatoes, chopped
  • 1 lb lump crab meat
  • 1 T + 1 t sugar
  • 1/2 box frozen okra
  • red and black pepper to taste
  • salt to taste

  • 1 Qt water

Directions

    In large dutch oven or heavy pot make roux using oil and flour, brown to deep brown over medium heat, be careful not to burn.

    More oil may be added if necessary. In large pot, chop onions, bell pepper and celery, saute until onion is clear.

    Add chicken broth, roux, tomatoes, garlic, salt, pepper and 1 qt water.

    Simmer for 30 minutes.

    Add okra and shrimp, simmer 20 minutes more, until okra is done.

    Add crab meat and after 5 minutes, 1/3 bottle of File. Let cool and reheat before serving. You may need to add additional water.
