Ingredients

  • 2 lb. peeled shrimp
  • 1 lb. cajun smoked sausage
  • 2 (14 oz.) cans okra and tomatoes
  • 1 (14 oz.) can cut okra
  • 1 c. bell pepper, chopped
  • 1 c. onion, chopped
  • salt, pepper and garlic powder to taste
  • 2 bay leaves, broken
  • 2 tsp. file
  • cayenne pepper (if desired)

Directions

    Make roux (light or dark as desired) with small amount of grease, flour, salt, pepper and garlic powder.

    Set aside.

    Saute bell pepper, onion and sausage in large stainless pot.

    Add salt, pepper, garlic powder, bay leaves, file and cayenne pepper.

    Add water until desired quantity of gumbo is reached.

    Bring to a boil; reduce heat to medium for 2 hours.

    Add shrimp.

    Cook on medium heat until shrimp is done.

    Serve over bed of rice.
