Ingredients

  • 1 cut up chicken or chicken wings
  • 2 lb. hot sausage, cut in 2-inch lengths
  • 2 lb. peeled and deveined shrimp or 3 pkg. dry shrimp
  • 1 1/2 c. roux (equal amounts oil and flour)
  • 1 finely chopped onion
  • 2 lb. cleaned crab (if available)
  • 1 lb. cut up stew meat
  • 1 lb. pickled meat (if desired)
  • 1 Tbsp. gumbo file
  • 1 lb. smoked sausage
  • 1/2 c. finely chopped bell pepper
  • 1/2 c. parsley flakes or fresh parsley
  • 4 c. boiling water
  • 1 Tbsp. Nature's Seasons seasoning blend
  • 2 tsp. garlic powder
  • 1 tsp. red pepper
  • 1/2 c. chopped green onion (shallots)
  • 1 lb. chopped ham pieces
  • 1 tsp. Creole seasoning (Cajun)

Directions

    In a large pot, steam chicken pieces, smoked sausage, hot sausage, stew meat, chopped ham and/or pickled meat and crab (if any).

    Cook about 10 to 15 minutes.
