Gumdrop Coconut Cake

  • 1 c. butter
  • 2 c. sugar
  • 4 eggs
  • 3 1/2 c. all-purpose flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1/2 c. buttermilk
  • 2 c. pecans
  • 2 c. coconut
  • 1 lb. mixed gumdrops (no licorice)
  • 1 tsp. vanilla

Directions

    Cream butter and sugar.

    Add eggs, 1 at a time, beating well after each addition.

    Combine flour, soda and salt; add to creamed mixture alternately with buttermilk.

    Fold in nuts, coconut and chopped gumdrops.

    (If gumdrops are sticky, roll in about 4 tablespoons flour.)

    Add vanilla.

    Spoon into 2 well-greased 9 x 5 x 2-inch loaf pans.

    Bake at 300° about 1 1/2 hours or until cake tests done.
