- 1 each pie shell (9 inch) for quiche
- 300 grams haddock smoked
- 1 1/2 cups cream
- 1 each onions chopped
- 150 grams swiss cheese grated
- 1 tablespoon flour, all-purpose
- 4 large eggs
- 2 tablespoons butter
- 3 tablespoons scallions, spring or green onions finely chopped
- 1/2 cup mushrooms sliced
- 1 x salt and black pepper
- 1 x nutmeg
Directions

1Bake pie crust with weight inside for 15 minutes in a 350F (180C) pre-heated oven.

2Remove weight and bake another 10 minutes.

3Cook onion in butter until transparent.

4Add mushrooms and cook until dry.

5Add flaked haddock to mixture and turn off heat.

6Place filling on pie crust.

7Beat eggs with cream and season with spices.

8Stir flour into cheese and place on top of filling.

9Pour seasoned egg mixture with green onions on top.

10Bake for 30 to 45 minutes in 300 F oven.
