  • 1 dozen flour tortillas
  • Refried Pinto Beans (homemade are best, but canned work great too!)
  • Butter
  • Shedded Cheddar and Pepper Jack Cheese
  • Spanish Rice (leftover rice works great)
  • any meat filling you like such as pork, beef, chicken, shrimp or fish
  • TOPPINGS:
  • Shredded lettuce
  • Chopped Tomatoes
  • Olives
  • Salsa
  • Sour Cream
  • Guacamole
  • lime wedges
  • cilantro
  • Chopped red onion
  • Nacho Cheese Sauce

    Brown your meat in a skillet with your favorite mexican seasonings. Place one tablespoon of butter on a non-stick skillet and melt it around. Place a flour tortilla on the butter and top with about 2/3 c. of refried beans. Sprinkle on shredded monterey jack cheese in desired amount and meat filling and rice. Fold your tortilla over one time to make a half moon shape and top the outside top with 2 T. cheddar cheese. Flip over and cook cheese until it forms a crust and then plate and top with your favorite toppings.
