  • 2/3 cup vegetable oil
  • 1/3 cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • Powdered sugar, for dusting

    For the cake: Place an oven rack in the center of the oven.

    Preheat the oven to 350 degrees F. Butter and flour a 9 by 5-inch loaf pan.
