  • 2 (9-inch) pie crusts
  • 2 lb. onions, sliced thin
  • 3 Tbsp. butter
  • 3 beaten eggs
  • 1 c. sour cream
  • 2 Tbsp. Dijon mustard
  • 1 tsp. celery seed
  • 1 Tbsp. parsley
  • 1/2 tsp. tarragon
  • salt and pepper
  • 2 c. chopped ham

    Preheat oven to 450°.

    Saute onions and ham 5 minutes.

    Set aside.

    In a bowl, combine eggs, sour cream, mustard, celery seed, parsley, salt and pepper.

    Add onion mixture.

    Stir well. Pour in pie crust.

    Top with other crust.

    Crimp edges. Bake for 10 minutes at 450°, then at 350° for 30 minutes.
