- 2 (9-inch) pie crusts
- 2 lb. onions, sliced thin
- 3 Tbsp. butter
- 3 beaten eggs
- 1 c. sour cream
- 2 Tbsp. Dijon mustard
- 1 tsp. celery seed
- 1 Tbsp. parsley
- 1/2 tsp. tarragon
- salt and pepper
- 2 c. chopped ham
Directions

1Preheat oven to 450°.

2Saute onions and ham 5 minutes.

3Set aside.

4In a bowl, combine eggs, sour cream, mustard, celery seed, parsley, salt and pepper.

5Add onion mixture.

6Stir well. Pour in pie crust.

7Top with other crust.

8Crimp edges. Bake for 10 minutes at 450°, then at 350° for 30 minutes.
