Ingredients

  • 1/2 cup gluten-free buscuit mix
  • 1/2 cup soy milk
  • 1/2 tsp salt
  • 1/2 tsp dry mustard
  • 1/2 tsp parsley flakes
  • 1/4 tsp pepper
  • 6 eggs
  • 1 cup diced ham
  • 3/4 cup shredded swiss cheese
  • 1 can diced potatoes

Directions

    Heat oven to 350F.

    Grease 8x8x2 baking dish.

    Mix baking mix, milk, salt, mustard, parsley, pepper, & eggs with fork/whisk until uniform color.

    May need a little extra biscuit mix, but you don't want it to be a thick batter.

    Stir in remaining ingredients.

    Pour in baking dish.

    Bake for 45 minutes.

    Then serve.
