- 4 Tbsp. margarine
- 1/2 lb. lean smoked ham, cut in small cubes
- 1/2 c. finely cut celery
- 1/4 c. chopped onion
- 2 c. partially cooked potatoes
- 4 Tbsp. flour
- 4 c. milk
- salt and pepper, if desired
- garnish with parsley
Directions

1Melt margarine.

2Add ham and saute on low for 5 minutes.

3Add celery and onion.

4Saute until tender (not brown).

5Cook potatoes in boiling salted water until nearly tender.

6Drain.

7Blend flour in ham and vegetable mixture.

8Add milk slowly.

9Cook and stir until smooth and thickened.

10Add potatoes.

11Cook over low heat until potatoes are just tender.

12Serve with parsley added.
