Ingredients
- 16 ounces frozen corn
- 8 ounces cheddar cheese shredded
- 1 cup sour cream
- 1 onion medium, diced,, about 3/4 cup
- 1 ounce Hidden Valley(R) Original Ranch(R) Salad Dressing & Seasoning Mix
- 2 tablespoons olive oil
- 4 eggs lightly beaten
- 8 ounces smoked ham diced
Directions

1Preheat oven to 350°F.

2In an ovenproof 3-quart casserole, over medium heat, add the oil and cook until shimmering.

3Add the onion and ham and cook for about 4 to 5 minutes until the onion is translucent and ham is just crisp.

4Fold in the corn and stir until combined. Remove the pan from the heat and let cool slightly.

5In a bowl, whisk the sour cream together with the seasoning mix and eggs until smooth.

6Stir in half of the cheese. Pour the egg mixture over the corn and stir well.

7Top with the remaining cheese and bake for 30 minutes until cheese has melted and has browned.
