Ham Potato Bake Recipe

  • 4 c. sliced cooked potatoes (4-6 potatoes)
  • 2 med. carrots (shredded)
  • 1 1/2 c. cubed cooked ham (or possibly Spam)
  • 1 (10 3/4 ounce.) can condensed cream of mushroom soup
  • 1/2 c. shredded sharp American cheese
  • 1/4 c. lowfat milk
  • 1 tbsp. instant chopped onion
  • 1/8 teaspoon pepper

Directions

    Cook potatoes.

    Layer 1/2 the potatoes and 1/2 the carrots in a 2 qt casserole.

    Stir together cubed ham, mushroom soup, 1/2 c. shredded cheese, lowfat milk, instant chopped onion and pepper.

    Pour 1/2 the ham mix over potatoes and carrots in casserole.

    Repeat layers.

    Combine soft bread crumbs, 1/2 c. shredded cheese and melted butter.

    Sprinkle over casserole.

    Bake uncovered at 350 degrees till heated through, about 45 min.
