  • 1 cup mayonnaise
  • 2 hard cooked egg yolks
  • 1-1/2 tbsp. onion, grated
  • 1 tbsp. fresh flat leaf parsley, finely chopped
  • 3 cups ham, shredded finely
  • 1 cup shredded Jarlesburg cheese
  • 1 to 2 carrots, minced finely
  • 6 sm. gherkins (pickles), finely chopped

Directions

    In a small bowl, combine mayonnaise, egg yolks (which have been forced through a fine sieve) onion and parsley; mix well.

    Cover and refrigerate at least 1 hour to allow flavors to blend.

    In a large bowl, mix ham, cheese, carrots, and pickles.

    Add enough of the dressing to moisten to your taste.
