Ham Soup

Ingredients

  • 6 slices bacon
  • 1 medium onion, thinly sliced
  • 1 pound beef shank
  • 3/4 pound ham, cubed
  • 6 cups water (or more)
  • 2 teaspoons salt
  • 2 16- ounce cans white northern beans
  • 3 cups cubed potatoes
  • 1 clove garlic, minced
  • 1 pound polish sausage, cooked

Directions

    Fry bacon, crumble and set aside.

    Add onion to 2 tablespoons of the bacon drippings and cook until tender.

    Add beef shank, ham, water and salt.

    Cover and simmer 1 1/2 hours.

    Remove meat from shank and dice.

    Skim fat from soup.

    Add beans, potatoes and garlic and simmer 30- minutes covered.

    Add cut sausage, bacon and simmer 15 minutes. Serves 10-12.
