- 5 cups water
- 1 large carrot, sliced into large chunks
- 1 large onion, quartered
- 4 stalks celery, coarsely diced
- 1/2 teaspoon dried parsley, crushed
- 1 bay leaf
Directions

1Combine all ingredients in a large dutch oven.

2Cover and simmer 30 to 40 minutes.

3Strain broth and discard residue.

4Cool and skim off fat.

5Cover and store in refrigerator or freeze for future use.
