- 12 oz cubed ham, fully cooked
- 2 tbsp chopped parsley
- 3 tsp prepared mustard
- 1 cup shredded cheddar cheese
- 1 1/4 cup gluten-free biscuit mix
- 1 eggs
- 1 tsp salt
- 1 1/2 cup soy milk
Directions

1Mix ham, parsley, mustard, & cheese together.

2Set aside.

3Beat biscuit mix, egg, salt& milk together until smooth.

4For each pancake, pour 1/4 cup batter onto griddle.

5Cook until edges are dry around edges.

6Turn over.

7Cook other side til golden brown.

8Heat oven to 350F.

9Fold & fill each pancake with 1/4 cup mixture.

10Arrange upright in ungreased baking dish.

11Sprinkle with extra cheese, if desired.

12Bake until filling is hot & cheese is melted, about 10 minutes.

13Makes approximately 12 tacos.
