- 1/2 c. soy margarine
- 1 c. sugar
- 1 egg
- 1 Tbsp. soy milk
- 1 tsp. vanilla extract
- 2 c. flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- jelly or jam
Directions

1Cream the soy margarine with the back of a wooden spoon and gradually add sugar.

2Beat the mixture until fluffy.

3Add egg, milk and vanilla; beat well.

4Sift flour, salt and baking powder together and add to mixture.

5Stir to make a soft dough.

6Chill in the refrigerator for 20 minutes.
