Hamburger-Vegetable Chowder

Ingredients
- 1 lb. lean ground beef
- 2 medium carrots, diced
- 2 tsp. salt
- 1/3 c. rice (regular long grain)
- 3 Tbsp. butter or oil
- 1/2 c. diced celery
- 1/4 tsp. pepper
- 2 c. canned tomatoes (one 14 oz. can with juice)
- 1 medium onion, chopped
- 1 1/2 qt. water
Directions

1Brown hamburger in oil over medium heat. Add all other ingredients except rice.

2Cook on low for 1 hour, then add rice. Cook until rice is done. Add more water or tomato juice, if it is too thick.

3V-8 juice may be substituted for liquid.

4Makes 6 servings.
