- 4 or 5 lb. beef brisket
- 2/3 c. soy sauce
- 3/4 c. lemon juice
- 1 Tbsp. liquid smoke
- 2 medium onions, sliced
- 6 to 8 potatoes, peeled and halved
- 1 (10 1/2 oz.) can beef consomme
- 1 tsp. minced garlic
- 1/2 c. barbecue sauce
- 6 to 8 carrots, peeled and halved
Directions

1Combine consomme, soy sauce, lemon juice and garlic.

2Pour over meat and marinate 12 to 24 hours.

3Place roast and liquid in a 300° oven.

4Roast should be covered with aluminum foil or lid. Roast for 2 to 2 1/2 hours.

5Remove from oven and top with sliced onions.

6Place vegetables around the roast in the juices.

7Return to the oven and roast an additional 1 to 1 1/2 hours until vegetables are tender.
