  • 1 large onion, chopped
  • 1 shallot, chopped (or more if you like)
  • 1 garlic clove, chopped (or more if you like)
  • 1 14 cups green lentils
  • 14 ounces chickpeas, drained and rinsed
  • 14 ounces diced tomatoes
  • 1 12 cups vegetable stock
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ginger
  • 1 tablespoon olive oil

Directions

    Fry onions in oil until lightly browned.

    Add shallot, garlic, onion, spices, lentils, tomatoes and vegetable stock.

    Simmer for 30 minutes.

    Add chickpeas.
