1Drain the beets, saving 1/4 cup of the liquid.

2In a 1-quart saucepan, stir together the cornstarch and sugar.

3Gradually stir in the beet juice and vinegar, keeping smooth.

4Cook over medium heat, stirring constantly, until thickened.

5Add the beets and heat gently.
