- 6 medium beets
- 1 Tbsp. cornstarch
- 1 Tbsp. sugar
- 1/2 tsp. salt
- dash of pepper
- 2/3 c. water
- 1/4 c. vinegar
Directions

1Wash and boil beets until tender.

2Peel beets while warm or you may use canned beets. Cut into slices.

3Mix cornstarch, salt, sugar and pepper in a 2-quart saucepan.

4Gradually stir in water and vinegar.

5Cook, stirring constantly until mixture thickens. Boil and stir for 1 minute.

6Add beets.

7Heat and serve.

8Makes 4 servings.
