- 2 c. diced beets
- 2 Tbsp. sugar
- 1 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/4 c. vinegar
- 2 Tbsp. butter or oil
- 1/3 beet liquid
Directions

1Drain beets; save water.

2In saucepan, combine sugar, cornstarch and salt.

3Stir in reserved beet liquid, vinegar and butter.

4Cook and stir until mixture thickens.

5Add beets and heat through.
