- 1/4 c. beet liquid
- 1 (1 lb.) can diced beets, drained (reserve liquid)
- 2 Tbsp. butter (before serving)
- 1/2 Tbsp. cornstarch
Directions

1In a 1-quart casserole dish, combine sugar, cornstarch, salt and pepper; stir in vinegar, liquid and beets.

2Cook, covered, for 6 minutes or until mixture boil and thickens, slightly stirring during the last half of cooking time.
