  • 1 Granny Smith apples, cored and thinly sliced (skin on)
  • 1 lemon, juice of
  • 13 cup cider vinegar
  • 13 cup honey
  • 1 teaspoon cinnamon
  • 14 cup olive oil
  • 8 cups salad greens (arugula, red leaf lettuce, or romaine)
  • 12 cup chopped dried apricot
  • 12 cup crumbled blue cheese
  • 12 cup pistachio nut

Directions

    Cover apple slices with cold water.

    Add lemon juice.

    Let stand until ready to serve.

    Mix vinegar, honey and cinnamon in small bowl with wire whisk.

    Gradually add oil, whisking until well blended.

    To serve, divide greens among 8 plates.
