- 8 lb. cooking apples, cored and quartered
- 2 c. water
- 10-inch stick cinnamon (optional)
- 1 1/2 c. sugar
Directions

1Combine apples, water and (if desired) cinnamon in an 8 to 10-inch quart kettle.

2Bring to a boil; reduce heat.

3Simmer, covered, for 15 to 20 minutes, stirring often.

4Remove cinnamon. Press apples through a food mill or sieve.

5Return pulp to kettle. Stir in sugar.

6If necessary, add 1/2 to 1 cup water for desired consistency.

7Bring to boil.

8Makes 6 pints.
