- 2 large zucchini
- 1 chopped onion
- 1 green pepper, cut into thin strips
- 2 sliced tomatoes
- 1/2 tsp. chili powder
- 1 tsp. oregano
- 1/4 tsp. cumin seed
- 2 Tbsp. grated Longhorn cheese
- 2 Tbsp. cooking oil
Directions

1In iron pot (or flameproof casserole), saute onion in 1 tablespoon of oil until golden.

2Mix all seasonings together. Layer vegetables sprinkled with seasonings; drizzle with remaining oil.

3Cover and bake at 350° for 1 hour.

4Add sliced tomatoes; top with cheese and bake, uncovered, for 20 to 30 minutes, until cheese is thoroughly melted and bubbly.

5Serves 4.
