  • 2 large zucchini
  • 1 chopped onion
  • 1 green pepper, cut into thin strips
  • 2 sliced tomatoes
  • 1/2 tsp. chili powder
  • 1 tsp. oregano
  • 1/4 tsp. cumin seed
  • 2 Tbsp. grated Longhorn cheese
  • 2 Tbsp. cooking oil

Directions

    In iron pot (or flameproof casserole), saute onion in 1 tablespoon of oil until golden.

    Mix all seasonings together. Layer vegetables sprinkled with seasonings; drizzle with remaining oil.

    Cover and bake at 350° for 1 hour.

    Add sliced tomatoes; top with cheese and bake, uncovered, for 20 to 30 minutes, until cheese is thoroughly melted and bubbly.
