Ingredients

  • 4 c. diced apples
  • 2 c. sugar
  • 3 c. flour
  • 1 c. cooking oil
  • 2 eggs
  • 1 c. chopped walnuts
  • 1/4 c. coconut
  • 2 tsp. baking soda
  • 1 tsp. each salt, cinnamon, nutmeg and vanilla
  • a few chopped maraschino cherries

Directions

    Mix apples and sugar together and let stand 1 hour.

    Sift flour, soda, salt, cinnamon and nutmeg together.

    Beat eggs and then add oil and vanilla.

    Blend apple mixture with egg mixture. Add flour mixture to egg and apple mixture.

    Stir in coconut, walnuts and cherries.

    Bake 1 hour at 350° in a greased and floured tube pan.

    After cake has cooled, remove from pan and top with confectioners sugar.
