Ingredients

  • 3 whole Ripe Avocados
  • 1 whole Lime, Juiced In A Bowl
  • 1/4 cups Chopped Onion
  • 1/4 cups Cooked Or Canned Corn Kernels
  • 1/4 cups Chopped Scallion
  • 1/4 cups Chopped Pecans
  • 2 teaspoons Finely Chopped Jalapeno Pepper
  • 1/4 teaspoons Black Pepper
  • 3 Tablespoons (rounded) Shelled, Roasted And Salted Pumpkin Seeds
  • 1 clove Garlic, Minced
  • 1/4 teaspoons (rounded) Salt

Directions

    Slice avocados in half and remove the seeds.

    Using a large spoon, scoop the pulp out of 2/3 of the avocado halves and place it in a mixing bowl.

    Add 3/4 of the lime juice.

    Using a fork, mash the avocado mixture.

    Peel the skin off the remaining avocado halves and slice pulp into small chunks.

    Add avocado chunks, the remaining lime juice and the rest of the ingredients into the bowl and fold gently to incorporate.

    For best flavor, refrigerate for 1 hour before serving.

    Serve with tortilla chips.
