Ingredients
- 1/4 c. onion, chopped
- 1/2 c. celery, diced
- 1/2 c. carrots, sliced
- 1/2 c. potatoes, diced
- 1/2 c. cabbage, shredded
- 1/2 c. turnips, diced
- 1 Tbsp. fresh parsley, chopped*
- 1/2 c. frozen cut green beans
- 1/4 tsp. dried basil
- 1/8 tsp. pepper
- 1 bay leaf
- 1 1/2 c. boiling water
- 1 (16 oz.) can tomatoes
Directions

1Add all ingredients except tomatoes to boiling water.

2Cover and boil gently for 15 minutes.

3Break up large pieces of tomato and add to vegetable mixture.

4Continue cooking until vegetables are tender, about 20 minutes.

5Remove bay leaf and serve with grated Parmesan cheese.

6Makes 4 servings, 1 cup each.
