- 2 lbs butternut squash, halved, seeded & cut into 1 1/2 inch chunks
- 2 lbs red potatoes, quartered
- 2 -3 red onions, quartered
- 1 (16 ounce) package baby carrots
- 4 -6 garlic cloves, crushed
- 3 tablespoons olive oil, divided
- 2 teaspoons coarse salt, divided
- 14 teaspoon pepper, divided
Directions

1Preheat oven to 450 degrees.

2Combine vegetables and garlic.

3Spread evenly onto 2 lightly greased baking sheets.

4Toss with oil, salt & pepper.

5Bake for 40-50 minutes, tossing vegetables and rotating sheets halfway through.

6Serve hot or at room temperature.
